Add carrots, cabbage, sweet corn kernels, french beans and salt (only for veggies). Stir and cook for 3-4 minutes. Add 2½ cups water or vegetable stock. Stir well and bring the mixture to a boil. When it starts boiling, add salt (add as required as we have already added salt for veggies) Slow cooker vegetable beef soup with frozen vegetables - If you do decide to go the frozen vegetable route, omit the fresh carrots, green beans, and frozen peas and purchase a 24-oz bag of frozen mixed vegetables instead and add them during the last 30 minutes of cooking. If you add the frozen vegetables too early, they will become gummy.
